What’s New at the Farm

Our newest addtions to the farm are….Bart and Betty!! They are a male/female pair of standard emus. They are very fun and have huge personalities! We are hoping to start a breeding program with them next fall for both chicks and to raise for meat.

Emus offer surprising benefits for homesteads, small farms, and curious animal lovers. These hardy, low‑maintenance birds produce nutrient‑rich meat that’s lean and high in protein. As efficient grazers, emus help manage pasture growth and reduce weed pressure without the intensive care larger livestock require. They’re quiet, disease‑resistant, and relatively space‑efficient, making them suitable for a variety of settings.

Key Nutritional Benefits

  • Very Low in Fat and Calories: A typical 3.5-ounce serving of emu fan fillet or meat contains less than 1 gram to about 3–4.7 grams of total fat (with very low saturated fat) and roughly 143 calories, which is about half the calories found in a comparable serving of beef.

  • High in Bioavailable Iron: Emu meat is rich in heme iron—often containing as much or up to double the iron found in beef—making it an excellent choice for individuals looking to boost iron intake.

  • Packed with Complete Protein: A 3-ounce portion delivers around 28 grams of high-quality protein, supporting muscle maintenance and repair.

  • Rich in B Vitamins and Minerals: It is an outstanding source of Vitamin B12 and Vitamin B5 (pantothenic acid), as well as selenium, zinc, phosphorus, and copper.

  • Natural Source of Creatine: Emu meat contains high levels of natural creatine (which is even more concentrated in processed emu products like jerky), acting as a natural ergogenic aid for physical and athletic performance.

  • Heart-Healthy Recognition: The American Heart Association has recognized emu meat as a healthy, lean protein alternative, and its fat profile includes beneficial monounsaturated fats.

Grounded in Tradition

Curt began his farming journey at just 11 years old, helping raise beef cattle and learning the rhythms of hard work, animal care, and land stewardship. Those early years shaped his values and skill as well as his practical know-how, patience, and a deep respect for animals. He used that knowledge to work with and help other local farners get their start.

Over time he turned that foundation into his own hog farm by applying the same commitment to humane care and sustainable practices. He founded Mikolowski Farms in 2018 with just 5 hogs. Today we have as many as 75 hogs at a time on the farm and raise 150 a year to feed our community quality farm raised meat.

In 2025 Tiffany and her children joined the farm and she brought her love of animals and never say no attitude along with her. This led to expanding the farm again by adding lamb, chicken, quail, and turkeys, catering services and a mini hatchery, broadening the farms offerings while maintaining the hands-on, attentive approach that has guided Curt since childhood. Today our farm blends tradition and thoughtful growth, delivering responsibly raised meats with the same pride Curt felt on day one.
